Ingredients

• 200g Caster Sugar
• 200g Softened Butter
• 4 Eggs, Beaten
• 200g Self-Raising Flour
• 1 tsp Baking Powder
• 30ml Milk
• 100g Butter (filling)
• 140g Icing Sugar (filling)
• 1 tsp Vanilla Extract (optional)
• 170g Strawberry Jam
• 150ml Double Cream (for whipping)
• as needed Icing Sugar (for topping)

Method

1. Cream Butter and Sugar, add Eggs.
2. Fold in Flour, Baking Powder. Add Milk.
3. Bake in two tins at 180°C for 25 min.
4. Cool, sandwich Jam and Cream, dust with Icing Sugar.
