Tarka Dal

A comforting Indian lentil dish, perfect for a delicious vegetarian meal or with chicken for added protein. Serve with rice for a complete meal.

Prepare a wok and saucepan.

Put Basmati Rice into frying pan and cover with cold water. Leave to soak.

Steam cook Broccoli in saucepan.

Dice Onion, Garlic and Chicken.

After 8 minutes, drain Broccoli, then transfer soaked Rice into saucepan and boil. Top up with more hot water until Rice is fluffy.

Add chopped Onion to frying pan and fry in Olive Oil for 5 minutes until golden, then add Garlic, Cumin, and Chili Powder. Fry everything together for 5 more minutes.

Remove Onion-Garlic-Spice mixture ('tarka'). Set aside. Add diced Chicken to frying pan with more Olive Oil. Fry 5 minutes until browned, then add Smoked Paprika, Salt, Pepper, and fry 5 more minutes.

When Rice is fluffy and water fully absorbed, set aside.

Rinse Lentils and add to saucepan. Cover with water and bring to a boil.

Add Turmeric to Lentils, then add cooked Chicken or drained Chickpeas. Simmer for about 10 minutes.

When Lentils soften, mix in tarka.

Serve with Rice and steamed Broccoli.
